inification : The harvest date is set when there is a good balance between sugar /acidity and after tasting the grapes. The grapes are mechanically harvested at dawn, stemmed and crushed and static deposit removal occurs at 8 °C. The juice is blended with the filtered juice. Fermentation occurs at 15°C using selected yeasts. The wine is then naturally clarified by removing the deposits and filtering. It is filtered again and bottled under sterile conditions at the winery.
asting notes: "This white wine made from a typically Mediterranean grape variety has a very light greenish yellow color. The nose has hints of very distinctive fruits, with among other things a touch of fresh almonds. The wine has a very nice roundness and harmonious flavor on the palate."
erving suggestions: This wine would go well with roast poultry, fish in sauce such as skate wings with capers and cheeses like Comte.
