inification : The harvest date is set when there is a good balance between sugar /acidity and after tasting the grapes. The mechanically harvested grapes are stemmed and crushed and the juice is poured into vats. Pellicular maceration occurs on Muscat grape varieties (Vermentino and Sauvignon). The grapes are pressed with static deposit removal at 8°C. The juice is then blended with part of the filtered juice and left to ferment using selected yeasts at 15°C. The wine is naturally clarified by deposit removal and filtering and is then filtered again and bottled under sterile conditions at the winery.
asting notes: "This wine has a pale yellow color with flashes of green. The nose is very delicate and subtle with hints of white flowers and fruits such as peaches. The wine is fresh and very well balanced on the palate."
erving suggestions: This wine would go well with a seafood platter, grilled fish or cheese (e.g. fresh goat cheese).
