inification : The harvest date is set when there is a good balance between sugar /acidity and after tasting the grapes. Mechanical harvest begins at dawn, the grapes are stemmed and pressed and static deposit removal occurs at 8°C. The grapes are then blended with part of the filtered juice. It is left to ferment using selected yeast at 15°C and then is naturally clarified by deposit removal and filtering. The wine is filtered again and bottled under sterile conditions at the winery.
asting notes : "This wine has a beautiful, very light pink color with a slightly blue tint. The nose has very gentle hints of red fruit jam. The fresh flavor, complexity and length on the palate make this rosé particularly enjoyable."
erving suggestions : this wine would go well with bouillabaisses (provençal-style fish chowder), Sète-style squid or marinated, barbecued king prawns.
